Honey crystallization is a spontaneous and natural transformation where the substance shifts from a liquid to a semi-solid state without losing its nutritional value. This process occurs because honey is an unstable, over-saturated sugar solution where glucose separates from water to form crystals while fructose remains fluid. The speed of granulation is primarily dictated by the ratio of glucose to water, the presence of pollen or wax catalysts, and the storage temperature. To reverse this effect, honey can be gently reheated in a water bath or warming cabinet, though users must keep the temperature below 40°C to preserve essential enzymes and flavor. While commercial packers often use high-heat filtration to prevent hardening, this method can deplete the health benefits found in raw varieties. Proper storage at room temperature and airtight sealing are the most effective ways to delay the onset of these natural changes.
